We caught up with Iain Campbell from the fabulous George Campbell and Sons.  If you haven't visited them at their shop in Whitefriars in Perth you have to pop in.  We recently enjoyed a tasting day and a tour round their processing factory and it was brilliant -you have to try the hot smoked salmon!

Iain comes from 3 generations of fishmongers and has been an independent fishmonger supplying the catering trade and public for 40 years.  He works 6 days a week Mon-Sat and it's always an early start.

1. What does a typical day at work look like for you?

There really is no typical day, there is a terrific team here making it all work smoothly. I can be in the office or out seeing Chefs.

2. What signals the start of your weekend / days off?

Saturday 2pm shop shut, a good lunch and a glass of wine.

3. What makes for a perfect night in?

Beautiful meal in cooked by my wife, hopefully Dover Sole.

4. What makes for a memorable day or night out?

Food, wine, laughter with friends mainly in Perthshire.

5. Tell us about the weekend you’d love to live again?

The weekend I took the entire family to Gleneagles.

6. And now your best ever day at work?

Sending two full vans of fish delivered to “on course catering” Ryder Cup 2014.

7. Any workday or weekend rituals?

Every day is a surprise, greeting my Operations Manager (27 years together) every workday morning knowing he has it all under control.

8. What’s in the perfect day off breakfast?

Porridge or Kippers

9. Any words of wisdom for us?

Get up early, work hard and appreciate your family.
