Spinach & Garlic Soup

Spinach has developed a reputation for being one of the healthiest foods around. It's packed full of iron and helps to give you energy and deliver essential oxygen to the cells in your body. It's no wonder then - that as it's bright colour suggests - it's pretty healthy and is often referred to as a 'Superfood.' and one of the best ways to pack in the healthy benefits of a variety of different vegetables, is to blitz them into a soup.

With the addition of sautéed garlic, onion, celery and leeks, this soup is not only nourishing but also filling and full of flavour.  Take some in a flask to work or have as a light dinner with a good helping of crusty bread.

Serves: 8

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 celery sticks, chopped
  • 2 leeks, chopped
  • 1kg spinach
  • 3 garlic cloves, crushed
  • 1250ml vegetable stock
  • 100ml single cream

    Method

    1. Heat the olive oil in a pan and fry the onion, celery, leeks and garlic until soft.
     
    2. Add in the vegetable stock and the spinach, cover the pan and allow the spinach to wilt for a few minutes.
     
    3. Take the pan off the heat and blitz with a hand blender. Add in the cream before serving.
