Shredded Winter Salad with Buttermilk Dressing

This delicious raw shredded Winter salad is bursting full of flavour and a light and welcome side dish to all the festive indulgence. We had ours as a side to some grilled salmon and it was delish!

With brussel sprouts, ginger and brocolli and drizzled with the most delicious tangy buttermilk and dijon dressing this is the perfect recipe to start into your foodie journey with raw vegetables - healthy, veggie and YUM!

Ingredients

  • 200g brussel sprouts, shredded
  • 1/2 small red cabbage, shredded
  • 200g broccoli, shredded
  • 1 tbsp ginger, grated
  • 30g parsley, chopped, plus 1 teaspoon
  • 125g seed mix
  • 50g pine nuts
  • 120ml buttermilk
  • 40ml sour cream
  • 20ml mayonnaise
  • 1 garlic clove, crushed
  • 1/2 teaspoon Dijon mustard
  • Salt and Pepper to taste

    Method

    1. In a food processor, fit the shredding blade and shred the brussel sprouts, cabbage and broccoli. Tip into a large salad bowl.

    2. Toss in the grated ginger, chopped parsley then mix through the seeds and pine nuts.

    3. To make the dressing, combine the buttermilk, sour cream, mayonnaise, crushed garlic, mustard and 1 remaining teaspoon of parsley in a mason jar, screw on the lid and shake the mix well. Open and taste and season if required

    4. Mix the dressing thoroughly through the salad and serve.
