Pomegranate Champagne Cocktail

Hi Everyone!

I love the holiday season and the great excuse we all had to relax and indulge in a little extra. However, like most of you, January is usually my time to detox and slow down on the booze.

Imagine my surprise then when I sat down to watch the news and discovered that a whole host of professionals were suggesting our annual detox could be doing more harm than good!  Apparently, a little of what you fancy does you good and we'd all be much better served with a balanced approach to our alcohol intake all year round.

Say no more! A Champagne Cocktail it is!

I wanted to create a cocktail that was colourful and seasonal and as it is pomegranate season this seemed like the perfect choice - and pratically one of your five a day.

We don’t want the kids or any strict January dieters / non-alcohol drinkers to miss out so why not use the same amount of pomegranate juice in the glass and top it up with rose lemonade before garnishing with pomegranate seeds? It really is delicious.

I want to take this opportunity to thank each and every one of you for your support this last year and here is to 2016 and another year of delicious food and photos.

Cheers

Gill x

Preparation Time:
15 minutes
Serves: 1

Ingredients

  • 25ml pomegranate juice (for extracting juice see method below - you will need 1 pomegranate for every 3-4 servings depending on the size of the fruit)
  • 15ml vodka
  • Rose Champagne or Prosecco as needed
  • Pomegranate seeds for garnish

    RECIPE METHOD

    1. To extract fresh pomegranate juice, separate the seeds into a bowl and muddle together. Pour the muddled seeds and juice through a sieve into a jug to extract the pomegranate juice.

    2. Pour the pomegranate juice and vodka into a champagne glass or flute.

    3. Top up with rose champagne or prosecco and add a few pomegranate seeds to decorate.

Note: If making this for a crowd, premix several servings of the pomegranate juice, vodka and champagne in a pitcher and chill. When ready to serve, give a good stir and pour into your glasses.

    NICKI'S TUPPENCEWORTH

I completely love the reports that poo-poo the idea of a dry January.  Life is all about balance and part of that balance has to be enjoyment.  The French and Italians would look on in complete disbelieve at the idea of a month long detox, preferring instead to look after their diets all year round, indulging less heavily but more happily.

I'm a big believer in an all round approach to your own personal happiness so whether that's champagne cocktails mid-January or chilling in a yoga class away from the hustle and bustle, make sure you look after yourself as best you can.
