Ploughmans Pickle

We've all love a classic ploughmans sarnie but this ploughmans relish is even better! It's chunky, sweet and spicy and the perfect addition to a cheese sarnie or slathered on a hot grilled burger straight from the barbeque. Once you’ve rustled this up, you’ll never buy pickle from the shop again!

Ingredients

  • 1 carrot, peeled and diced
  • 4 garlic cloves, peeled and finely chopped
  • 1 courgette, peeled and diced
  • 1 red pepper, de seeded and diced
  • 1 onion, peeled and diced
  • 1 large apple, peeled and diced
  • 180g dark brown sugar
  • 1 tbsp lemon juice
  • 200ml malt vinegar
  • 1 tsp ground allspice
  • 1 tsp mustard seeds
  • 1 tsp cayenne pepper
  • 1 tsp salt

    Method

    1. Combine all the ingredients into one saucepan and bring them to the boil.
    2. Reduce the heat to a simmer for about 50 mins to 1 hour, stirring often until the mixture becomes thicker and looks like a chutney consistency.
    3. Transfer to sterilised jars and add salt to season
