This fresh Mediterranean salad is the perfect salad dish for any time of the year. The salad gets a wallop of flavour from the garlic and fresh mint and is best served straight after mixing. Crunchy cucumber is one of my favourite ingredients in a salad and this is a great salad recipe when you're bored of lettuce. Again I love versatility in dishes and you can munch on this salad on its own for a healthy lunch with pita bread or serve on the side with your main evening meal alongside some grilled chicken, lamb or fish.
If you want to add variation to the dish, you could also include some crumbled feta cheese to add extra flavour. Shepherds salad is definitely a dish that's both good for you and fills you up.

1. In a salad bowl combine the chopped tomatoes, cucumber, onion, parsley and mint.
2. In another small bowl whisk together the olive oil, lemon juice, salt and crushed garlic. Pour over the salad and mix together. Crack some black pepper over the top.
3. Serve immediately.
