Smashed Avocado, Feta and Mint on Sourdough

Hi Everyone,

With a busy school term behind us now, I seem to have spent the last couple of months rushing around first thing in the morning - getting the kids up and ready for school and getting myself organised along with all the other endless tasks that need done before 8.15am!  

As a result, breakfast this last little while has become a bit boring with the same old toast or cereal. Without much time in the morning, it's easy to get caught in a rut of preparing the same breakfast dishes. I'm keen to break this cycle by setting myself a challenge over the next week or so to find and create new and exciting quick breakfast recipes that are also healthy.

This avocado toast with feta and mint is both delicious and satisfying and will curb any mid morning food cravings. Avocados are so nutritious and are full of great beneficial health benefits.  If you like avocados you will love this.

Serves: 2


  • 1 ripe avocado
  • 1 tablespoon fresh mint, chopped plus a little extra to serve
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/4 teaspoon salt
  • 80g feta cheese, crumbled
  • 4 slices sourdough bread
  • pepper to season


    1.  Scoop out the avocado into a dish and mash with a fork to a rough paste. 
    2.  Add in the lemon juice, chopped mint, salt and feta cheese and mix well.
    3.  Toast the slices of sourdough, then top the slices with the avocado mix.  Serve with some chopped mint and freshly ground pepper.
