With a busy school term behind us now, I seem to have spent the last couple of months rushing around first thing in the morning - getting the kids up and ready for school and getting myself organised along with all the other endless tasks that need done before 8.15am!
As a result, breakfast this last little while has become a bit boring with the same old toast or cereal. Without much time in the morning, it's easy to get caught in a rut of preparing the same breakfast dishes. I'm keen to break this cycle by setting myself a challenge over the next week or so to find and create new and exciting quick breakfast recipes that are also healthy.
