Sausage, Courgette & Rosemary Tortilla Style Pizza

This fabulous tortilla recipe is a much healthier way to eat pizza and it's super quick and simple to make.  I detest thick pizza bases and this is a clever way to cook up a pizza feast on a thin and light base.

My friend Haggie made me a tortilla pizza last year and I have been hooked ever since. The fun bit is the versatility – you can pretty much top it with whatever you have to use up in the fridge.

It’s a great treat for the kids – and because they’re so easy to make they can make their own. I let my kids arrange their toppings and then pop them in the oven, which always adds a bit of nonsense to dinnertime.

For those who have allergies you can swap the flour tortillas for gluten free ones and swap the mozzarella for a dairy free cheese.

All-in-all an easy weeknight dinner that can be prepped and on the table in 15 minutes.

Ingredients

  • 1 large sweet chilli tortilla
  • 40g tomato passata
  • 1/2 courgette, thinly sliced
  • 1 caramelised onion sausage
  • good handful of grated mozzarella
  • 1 teaspoon rosemary leaves, chopped
  • sea salt and cracked black pepper
  • olive oil, to drizzle

    Method

    1. Preheat your oven to 200C/400F. Put your tortilla on a sheet of non stick baking paper onto an oven tray and spread with the passata.
    1. Take the sausage meat out of its casing and pinch the meat into small balls and arrange over the tortilla. Next arrange the slices of courgette over the tortilla and then the mozzarella.
    1. Sprinkle the chopped rosemary, sea salt and pepper over the top and pop into the oven for no longer than 10 minutes. These cook pretty quickly so keep an eye on the oven.
    1. Take out the oven, drizzle with some olive oil and serve.

    Sausages and courgette's together are one of my foodie favourites.  Throw in a few tomatoes, some garlic and a heap of spaghetti and I'm in heaven. 

    I've never tried a tortilla pizza before but I am LOVING the sound of this and with RG away on a boat it looks like a perfect quick and easy dinner for one!
