Haggis Lasagne

McKays Hotel, Restaurant and Bar is probably well known to most being situated in the heart of Pitlochry. Known for its excellent pub food and live music, McKays is a great venue for the whole family.
 
This week McKays have cooked us up a tasty Haggis Lasagne which is deliciously served with a peppery side salad and garlic bread.  Fresh local produce is used to provide classic Scottish and international dishes in the restaurant and well worth a visit if you're in the area and looking for a lunch or dinner stop.
 
The restaurant and pub are open 7 days a week from early to late.

Serves: 6

Ingredients

  • Napoli Sauce
  • 1 medium white onion finely diced
  • 4 cloves of peeled garlic chopped
  • Pinch of dried oregano
  • 50 ml good red wine
  • 1 dessert spoon of tomato puree
  • 3 dessert spoons of olive oil
  • 800g tinned chopped tomatos
  • salt and pepper to taste
  • Cheddar Sauce
  • 50g unsalted butter
  • 50g plain flour
  • Half a teaspoon of english mustard
  • 3/4 pint of full fat milk
  • 115g good strong cheddar
  • 450-500g thinly sliced haggis

    Method

    Napoli Sauce

    1. Warm olive oil, onion,garlic,oregano and soften.
    2. Add tomato puree, red wine and chopped tomatoes.
    3. Cook for 10 minutes, season and taste.
    4. Blitz sauce in blender until it's a very smooth sauce.

    Cheddar Sauce

    1. Melt butter then add flour and cook for a few minutes on a low heat
    2. Add the milk slowly, stirring all the time until you have a thick sauce
    3. Once thick add the mustard and add 115g of the grated cheese

    Layering

    1. Layer Napoli Suace in bottom of an ovenproof dish about 18cm square.
    2. Cover with lasagne sheets and add thin slices of haggis and drizzle with the white sauce.
    3. Continue layering in this order until your dish is almost full.
    4. Cover the filled dish with cheese sauce and sprinkle the remaining 35g of grated cheddar.
    5. Bake in the oven at 170 degrees for 25 minutes.
    6. Garnish with dressed salad and garlic bread.
    7. Enjoy!
