Easy Chocolate Truffles

I was given this recipe from my childhood friend Tamsin when I was 9 years old, so that makes this recipe pretty old! I make these truffles every year because I just love them; they’re my annual treat in the run up to Christmas and I scoff them whilst wrapping presents or doing my online Christmas shopping at night. 

Equally, they’re a perfect gift to box up, wrap and ribbon for handing out to friends and family.

The original recipe didn’t have the coconut in it -  I’ve added that in recent years as I think it adds a great texture to the truffles.

To make any chocolate truffle fabulous, you have to use the best possible chocolate and so I used Charlotte Flowers Java milk chocolate bars – melt in the mouth!

These truffles are really simple to make - you don’t even have to use the oven. Which is perfect, because I love the kids getting involved in the kitchen and as you can see I had a little helper this year! Just keep them away from the rum!

Serves: 20

Ingredients

  • 200g Milk Chocolate
  • 200g Icing Sugar, sieved
  • 30g Butter
  • 30g Coconut plus extra for coating the truffles
  • 1 Egg Yolk
  • 3 tbsp Rum

    METHOD 

    1. Break the chocolate and melt with the butter in a bowl over boiling water. Remove from heat and stir in the sieved icing sugar, egg yoke, coconut and rum.
    2. Leave the mixture to cool enough to handle, stirring from time to time.
    3. Shape into balls in the palm of your hand, then roll in the coconut. Place them apart on greaseproof paper on a tray and then move to the fridge to set.

    A super easy chocolate truffle is a brilliantly good recipe to have up your sleeve. I do love making and receiving foodie gifts at Christmas and this is one that's going onto my list this year. 

    Its been scientifically proven that chocolate makes you happier - something to do with a chemical reaction that is the same as the one the brain makes when you're in love. Its also true that dark chocolate is high in anti oxidants and is good for you! (not rolled in sugar and dipped in caramel though - BOO!)
