Early Spring Green Soup

Despite our recent flurry of snow, I noticed the early signs of spring around Perthshire this week with the first bursts of colour appearing in groups of crocuses and daffodils. Although it’s certainly still winter it gave me hope that spring is really just around the corner so using what is available from Perthshire’s local and seasonal offerings it was easy to come up with this delicious green soup which although light and spring inspired, is still hearty and warming.

Not only is this soup a lovely colour, it is packed with nutrients and is really tasty. I hope you try it out at home.

Ingredients

  • 2 tbsp olive oil
  • 2 onions, chopped
  • 1 celeriac, peeled and chopped
  • 150g kale, roughly chopped
  • 2 courgettes, diced
  • 1.5 litres of vegetable of chicken stock (Gluten Free if you wish)
  • 500ml milk
  • sea salt and cracked pepper
  • handful of toasted almonds to serve

    Method

    1. Heat a large saucepan over a high heat and add the olive oil. Add the sliced onions and cook for a few minutes until soft. 
    1. Add the courgettes and celeriac to the pot and stir for 5 minutes further. Next pour in the stock and add in the kale. Bring to the boil, reduce heat and cover and cook for a further 5 minutes until the vegetables are tender.
    1. Season to taste and using a hand blender puree the soup until smooth. Add in the milk and stir and season again to taste. 
    1. Serve with a sprinkling of toasted almonds.

    Regular readers will know that I am big fan of all soups and like Gill, I think this recipe is a the perfect bridge between winter and spring.  Imagine a gorgeous walk out in the crisp, cold air enjoying the colours appearing below frosty ground and then arriving yo home to a big bowl of this powerhouse soup. 

    Our bodies crave extra vitamin C and other nutrients at this time of year and with courgettes, kale and celeriac all making an appearance in one tasty bowl, you'll be guaranteed a little boost of energy!
