Chicken Chilli #SoupHero Soup

You'll remember that recently we ran our first Perthshire Soup Hero Competition and we are delighted to bring you the winning entry from Alex Hone right here! Competition was tough - we do come from a long line of amazing soup makers us Scots - but this warming Chicken Chilli Soup ticked all the boxes for us.  
 
It really is a whole meal in a bowl, with chicken thighs packing it full of flavour and wholesome protein. add to this the abundance of Super foods Alex has added and you have a bowlful of tasty, healthy goodness right there. I loved the Asian influence and Graeme P is a bit of health nut so he was just bowled (PUN check!) over at how delicious something this good for you could be.
 
Alex is a working Mum (you may recognise her from Copperfields Hairdressers) and reckons this is quick and easy to make and enjoyed by the whole family. Well done Alex, a worthy winner of our Soup Hero Trophy!

Preparation Time:
20 minutes
Cooking Time:
40 minutes
Serves: 6

Ingredients

  • Big lump of coconut oil (Highland Health Stores)
  • Tablespoon sesame oil
  • 3 fresh chillies
  • 2 cloves garlic roughly crushed
  • 2 tablespoons dark soy sauce
  • 5 chopped spring onions
  • 1 red pepper
  • 1 orange pepper
  • 4 Free range chicken thighs
  • 1 Bag of Kale
  • Shiitake mushrooms
  • Juice of a whole lemon
  • Desert spoon of local honey
  • Freshly chopped ginger
  • Veggie or Chicken Stock Cube
  • Noodles or Rice to Serve

    METHOD

    So easy I could hardly believe it!

    • Cook it all together, add water and a stock cube
    • Add an optional dash of milk
    • Check spice, add more if needed!
    • Season
    • Add noodles to serve.

    As a little aside, Gill used brown rice when she made it for her family and said it was delicious!
