Breakfast Rice with Honey & Cranberries

As the old phrase goes “breakfast like a king, lunch like a prince and dine like a pauper”.  Unfortunately, I’m one of these people that rarely feels hungry in the morning. Over the past few years however I have made a pact with myself to stop and eat a small healthy breakfast, as I was finding more and more that I was struggling with energy slumps in the early part of the afternoon.   Breakfast is an important part of our daily routine and can make a positive impact on our energy levels and as I came to realise, my ability to become more productive.

I’m always looking for diverse and healthy breakfast options and with Perthshire’s fantastic honey products on the market, I decided to experiment and try some honey in a rice based breakfast dish.  Honey provides us with natural sugars, which are a healthy source of energy for the body, and with rice being abundant in carbohydrates, it also acts as fuel for the body.

I used 0% Fat Greek yoghurt in this recipe but you can tweak the ingredients to suit your own taste buds – if you were feeling like an indulgent treat, double cream would be delicious as a substitute for the yoghurt (maybe for the weekend)!.  Again I love cranberries but other dried fruits would work as equally as well.

Preparation Time:
10 minutes
Serves: 4

Ingredients

  • 195g basmati brown rice
  • 1/2 teaspoon salt
  • 245g 0% greek yoghurt
  • 1 vanilla bean (just the seeds)
  • 50g dried cranberries
  • handful of chopped almond flakes to serve
    1. Put the rice in a pot of water with the salt and bring to a boil. Once its cooked, strain and put to the side.
    1. Beat together the yoghurt and vanilla seeds and add and mix to the cooled rice.
    1. Add in the cranberries to the mix and dish up into breakfast bowls.
    1. Top with chopped almond flakes.

    I love breakfast and I am like a bear with a sore head if I miss it. It is a great source of amusememt to RG, my planning for the morning's feast an evening ritual while making my camomile tea. 

    I think any dish that brings new and healthy ideas to the most important meal of the day is brilliant, particularly when you have a busy life or small children.
