Blueberry & Scottish Oats Smoothie Bowl

Hi Everyone,

Smoothie bowls have been a huge breakfast trend through 2016 and I will be continuing to make them into this year as they're such a healthy start to the day. This smoothie bowl is a moreish thick blend of whole foods - you can be imaginative and blend your favourite flavours - I've used oats, blueberries and banana as the base to my bowl this week.

This recipe is very similar to the original type of smoothie we're used to drinking with a straw, but just a bit thicker.  The fun bit is decorating the top with your favourite healthy toppings. You can keep it simple or get creative and go over the top. I'd love to see you're versions so make sure you take some pics and tag us at #smallcityrecipes!

Serves: 2

Ingredients

  • 150g blueberries
  • 100g Scottish oats
  • 250ml almond milk (unsweetened)
  • 1 vanilla bean, scraped
  • 1 banana
  • 1 tsp maple syrup
  • Toppings - Handful of chopped blueberries, coconut chips and chia seeds
    1. Put all the ingredients (excluding the toppings) into a blender and blitz until smooth.
     
    2. Pour into a bowl, and sprinkle over the toppings.
