Asian Chicken & Veggie Fried Rice

My recipe this week was inspired by my visit to Manhattan's very own Chinatown. I absolutely love walking around Chinatown, taking in the bustling atmosphere and I get such great culinary inspiration from walking around the food shops and markets stalls. The colours of the buildings and signs are vibrant and exciting and there is so much character in this neighbourhood. 

I wanted to cook up something Asian inspired which my two small boys would enjoy, so not too spicy. I also wanted to include some veggies to make sure they'd get some of their 5 a day! They love chicken, so I opted for a chicken and veggie based fried rice. This is a healthy dish which is quick to make and it is also just as delicious when made ahead. As this rice is on the mild side, be sure to have bottles of soy sauce or hot sauce on the table for the adults!

Ingredients

  • 250g rice
  • 2 free range chicken breasts, diced
  • 2 tbsp soy sauce
  • 1/2 teaspoon sesame oil
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oi
  • 2 onions, chopped
  • 1 red or green pepper, diced
  • 90g sugar snap peas
  • 1 garlic clove, crushed
  • 50g frozen peas
  • 2 large free range eggs, beaten
  • 3 spring onions, finely sliced to garnish

    1. Mix the chicken with the sesame oil, soy sauce and sugar and leave to marinade for half an hour.

    2. Cook the rice in boiling water, then once cooked drain and leave to the side.

    3. Heat the vegetable oil in a large wok over a medium heat and add the onions then the pepper and gently fry for 5 minutes. Add the garlic and then the chicken mix and cook through for 5 minutes. Add the peas and sugar snaps and fry for another few minutes and then add in the rice and toss together. 

    4. Evenly drizzle in the beaten eggs and cook for about 2 minutes, stirring frequently, until the rice is coated in egg and set.

    5. Serve using the sliced spring onions to garnish.

    I am loving the fact that Gill is cooking up a storm in New York, all the while showcasing dishes that can be made right here in the small ciy with local ingredients. 

    Shopping for local food is something I'm extremely passionate about; I ran Perth Farmers' Market for five years and it remains one of my favourite ways to spend a Saturday. The idea that we can eat well and help our local economy and the farmers working the land on our doorstep is one that fills me with incredible joy.

    So, wherever you are in the world, whatever you're doing, look around for the butchers, bakers, delis and greengrocers that breathe taste, quality and life into a town, city or village. You'll be very glad you did!
