Ginger Iced Tea

Hi Everyone,

The Bean Shop on George Street in Perth have the most amazing selection of teas and coffee’s so I was delighted to try their range of oolong teas this week. 

As we enter into March this week and start to see glimmers of sunshine, I've been inspired to ditch the kettle and make some iced tea. I opted for a ginger iced tea recipe as it’s such a refreshing drink and ginger of course is great for helping with digestive problems like nausea and motion sickness. If you're an expectant mother then this is definitely a great drink to help with morning sickness.

The Bean Shop has various varieties of Oolong. For this recipe I used their Formosa Choice Oolong which is a lovely smooth and floral tea but i'm looking forward to trying the sweet Oolong Dung Ting next.  They also have an Orange Blossom Oolong tea which would could equally be lovely as an iced tea infused with orange slices and mint.

Preparation Time:

Serves: 4

Ingredients

  • Sliced piece of ginger (circa 2 x 1.5 inch piece)
  • 500ml water
  • Loose Leaf Oolong Tea
  • For the sugar syrup:
  • 120ml water
  • 100g caster sugar

     Method:

    1. Start by making the sugar syrup. In a pan combine the sugar and water. Bring to the boil, stirring until the sugar has dissolved. Allow to cool. This can be made ahead and stored in an airtight container for up to one month.
    2. Next heat 500ml water in a pan with the sliced ginger and bring to the boil.  Fill a loose leaf tea infuser with the Oolong Tea and immerse into the pan and steep for 5 minutes.
    3. Turn off the heat and remove the tea infuser from the pan. Leave the ginger to steep for a further 45 minutes.
    4. Strain the ginger tea through a sieve into a pot or water jug and leave to cool further in the fridge.
    5. Stir in the sugar syrup and serve the iced tea in glasses over ice with a wedge of lemon.
